Anaerobic fermentation occurs in an oxygen-deprived environment, typically sealed containers or tanks. During this process, freshly harvested coffee cherries are placed in these sealed containers and allowed to ferment for a specific duration, which can range from a few hours to several days. The absence of oxygen creates an environment where beneficial microorganisms, such as lactic acid bacteria and yeast, play a crucial role in influencing the flavor profile of the coffee beans.
